The room takes its name from the district of Santa Ana, modest place of artisans and laborers during the colonial era, which register a rapid development to be built in the XVIII century the road that links the area with the Plaza Grande, the road currently known as Calle 60, where is situated La Casa Azul, has a unique temple that has one of the most splendid atriums of the city.

In the 20th century there was the idea to fusion italian and yucatecan food, making an unsuccessful attempt to create a panucho pizza which wasn't considered good neither by yucatecans nor by italians.
